  • 8 ounces (225g) of pasta (such as spaghetti or linguine or busiate)

  • 2 cups fresh basil leaves

  • 1/4 cup pine nuts

  • 2 cloves of garlic (optional)

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup Partanna Extra Virgin Olive Oil

  • Salt and pepper to taste

  • Partanna olives (optional, for garnish)



  1.  Cook the pasta according to package instructions until al dente. Drain and set aside.

  2.  In a food processor, combine the basil leaves, pine nuts, garlic, and Parmesan cheese. Pulse until well combined.

  3.  With the food processor running, gradually add the Partanna extra virgin olive oil until a smooth and creamy pesto sauce is formed.

  4.  Season the pesto with salt and pepper to taste.

  5.  In a large mixing bowl, toss the cooked pasta with the pesto sauce until evenly coated.

  6.  Garnish with Partanna Castelvetrano olives, if desired.
